الوصف:
مسؤول مراقبة الجودة مسؤول عن متابعة تنفيذ مشروع مطابخ المدارس في المدارس الحكومية، مع التركيز على ضمان تطبيق تدابير السلامة الغذائية المناسبة أثناء تحضير الوجبات الباردة في المدارس العامة.
المسؤوليات الأساسية:
- متابعة أنشطة المشروع بدءًا من مرحلة الشراء، إلى مرحلة التحضير في المطبخ وتوزيع الوجبات على الطلاب.
- التنسيق مع موظفي المطبخ لضمان توفر جميع المواد الغذائية والإمدادات في الموقع، وشرائها وفقًا لقواعد وإجراءات المانح.
- التحقق من دقة الطلبات، تأكيد الجودة والكمية والمواصفات، والموافقة على استلام الإمدادات وفقًا لذلك، ورفض وإعادة الإمدادات غير المقبولة.
- إعداد وصيانة المخزونات لضمان الدقة والكفاءة والامتثال والتعامل السليم مع الإمدادات وتقليل التلف.
- تدريب موظفي المطبخ على السلامة الغذائية وإدارة المطبخ.
- ضمان تطبيق معايير السلامة الغذائية في جميع مراحل التنفيذ (التحضير، التوزيع والتخزين) كما هو مذكور في دليل التدريب وإجراءات التشغيل القياسية ذات الصلة.
- التأكد من اتباع الموظفين لجميع معايير السلامة الغذائية والنظافة الأساسية.
- متابعة جدول التنظيف وملء قوائم التحقق ذات الصلة عند فتح وإغلاق كل وردية.
- جمع التوقعات اليومية وقوائم الحضور بالتنسيق مع مشرف المدرسة/المربي الصحي، والتحقق من السجل الصحي لأي حساسية.
- العمل على نظام تتبع المواد واستراتيجية FIFO لضمان التخزين السليم للمواد الخام والبقايا.
- تنفيذ ومراقبة معايير HACCP ومعايير السلامة الغذائية في المطبخ.
- تقييم ومناقشة التحديات المتعلقة بالبرنامج مع مدير المشروع.
- حضور والمشاركة في اجتماعات IOCC عند الحاجة.
- اتخاذ الإجراءات التأديبية عند التوجيه.
- أداء مهام أخرى حسب الحاجة أو التكليف.

الخبرة:
- من 2 إلى 3 سنوات من الخبرة العملية.
- خبرة سابقة في مجال المنظمات غير الحكومية والإنسانية ميزة.
- خبرة في المطبخ أو شركة تموين مفضلة.
ظروف العمل:
- العمل الميداني.
- زيارات إلى مكاتب المنصورية و/أو طرابلس للاجتماعات والتدريب والأعمال الورقية ذات الصلة.

The Quality Control Officer is responsible for monitoring and following up on the implementation of Lebanon School kitchens Project in Public Schools, with main responsibilities to ensure appropriate food safety measures are applied in the kitchen during preparation of cold meals in public schools.
Responsibilities and Essential Functions
- Monitor the project activities; starting from the procurement phase, to the preparation phase in the kitchen and the distribution of meals to students.
- Coordinate with the kitchen staff to ensure all food items and supplies are available on site, and are procured according to the specific rules and procedures of the donor.
- Check orders for accuracy, confirm quality, quantity and specifications and approve receipt of supplies accordingly, and reject and return unacceptable supplies.
- Prepare and maintain inventories to ensure accuracy, efficiency, compliance, proper supplies handling and minimal damage.
- Train the kitchen staff on food safety and kitchen management.
- Ensure food safety norms and standards are applied at all stages of implementation (preparation, distribution and storage) as indicated in the training manual and relevant SOPs.
- Ensure employees are following all food safety and basic hygiene standards.
- Follow the cleaning schedule and fill the related checklists on the opening and closing of each shift.
- Fill relevant checklists and schedules
- Collect daily forecast and attendance sheets in coordination with the school supervisor/health educator. Check as well the health record for any allergy.
- Work on the traceability system and FIFO strategy to ensure proper storage of the raw materials and leftover.
- Implement and monitor HACCP and food safety standards in the kitchen.
- Assess, discuss and address program challenges with the project manager.
- Attend and participate in IOCC meetings, when necessary.
- Take disciplinary action, when directed.
- Perform other duties as required or assigned.

Experience:
- 2 to 3 years of work experience.
- Previous experience in NGO and humanitarian field is an advantage.
- Experience in kitchen or catering company is preferred
